Liver Pancakes

Does this pancake look good? I think it looks like the perfect pancake!

And would you believe it only has TWO ingredients??


I had seen a video on eating organ meats during preconception and pregnancy, it's on Youtube called 'Nourished'. Within the video, one of the women featured was eating liver pancakes. I wanted to find out more about these liver pancakes. What's in them, who's eating them, can they be made baby-friendly too?


So there are recipes online, but I wanted something even simpler. This combination pairs JUST beef or chicken liver and eggs. If you've introduced eggs to your little one, or are simply wanting to boost that nutrient density in the foods you're eating, then these are definitely something to try.


Even if you've only introduced the egg yolk so far (and it's been tolerated), then you could do an egg yolk and liver pancake without the egg white!


Ingredients:

You can adjust the amount depending on how many people are eating. I usually make larger crepe style pancakes in a ~20cm frypan.

For myself and my toddler it makes 3-4 crepes and I usually give him at least a 1/4 of the stack. You can also use egg rings for smaller pancake sizes, just make sure the pan is hot before starting to cook, as the egg mixture is runny and may run out the sides a little.

  • 4 large eggs

  • fresh or frozen beef liver - *simply grate in frozen liver, or chop fresh liver into smaller pieces*. You can choose the amount of liver you want to use. I usually grate in frozen liver of around a tablespoon, but if concerned about the flavour then you can absolutely use less and work your way up!

  • fat or oil to cook with - butter, ghee, tallow, duck fat, etc, coconut oil, etc.

OPTIONS:

  • Make a bigger batch for more people, or save some for later.

  • Other organs can be added - I often also add cow's or lamb's heart to the mix.

  • Spices - cinnamon for a sweet option, or savoury - try paprika, cumin, garam masala.

  • Fruit - Occasionally I'll add a 1/2 banana or small handful of fresh or frozen berries to the blender. If I ever served fruit on the side of these pancakes, then I know what will get preferenced! *When adding berries, it becomes a bit runny, so I find that the middle of the pancake can tear - to overcome this, I use a spatula to run around the edge and underneath the pancake before flipping and this works every time!

  • Vegetables - Some roasted pumpkin or sweet potato makes a more savoury pancake, and goes nicely with some spice as well. Add these to the blender. I would use no more than 1/3 cup for the 4-egg amount of this recipe.


Method:


  1. Crack your eggs into a blender or food processor.

  2. Grate in your frozen liver, or add your chopped fresh liver.

  3. Process the mixture till blended nicely (should take less than 30-60 seconds). Depending on your egg to liver ratio it may be pink or red in colour.

  4. Heat your frypan on the stove over a medium heat at least, add your cooking fat to coat the pan. Be liberal with your amount of fat!

  5. Pour the egg mix into the pan to coat the bottom. The pancakes will cook quickly, but if you're after a thicker pancake than be sure to give it time to cook from the bottom up and that the top isn't very runny anymore before flipping.

  6. If using egg rings, remove these prior to flipping. When about to flip your pancake, give the pan a jiggle first to make sure it's moving easily off the pan. I recommend using a spatula, instead of pan flipping. These pancakes are delicate and a pan flip may tear them!

  7. Give them 20 or 30 seconds on the second side for thin pancakes and then move to a plate. And repeat!

  8. Storage: They can be stored in the fridge for 2 days.

WAYS TO SERVE:

These can be eaten:

  • straight and plain.

  • sweet with coconut or dairy yogurt, fruit, banana, berries, honey* (for 12 mths + only), maple syrup*. *Reserve sweeteners for older kiddies, and limit in kids under 2yo.

  • savoury with avocado, goats cheese, cow cheese, bacon, sour cream, sauerkraut.

  • sweet & savoury - bacon & banana!
