Fatty Fruity Gummies

I'd been making grass-fed gelatin gummies for my little one for a while. Typically I has used coconut cream, bone broth, herbal teas or juice for the liquid, made from some sort of fruit once he was getting closer to 12 months old, but really wanted to pair these gummies with a more healthy fats or think of a way to up their nutrient density for snack times.


I started to experiment with egg yolks and butter in the gummies. I was thinking of a lemon curd as it uses yolks, but if I used lemon juice then I'd need a sweetener for sure. Instead I'm using the orange juice which is sweeter than lemon juice, and mixed in with a little water or bone broth to bring that sweetness and sugar content down for younger bubs.


Using the egg yolks is great, because they bring a creaminess to the mixture and of course egg yolks are the most nutritious part of the egg and this can be another great way to boost that nutrient density in a snack overall.


Adding butter brought up the fat component of these gummies. This brings the satiation and stabilising of the blood sugar from consuming the juice.


I was expecting the gummies to turn a cloudier, muted orange colour, but as you can see below, they are still pretty vibrant. My son has loved these gummies. I don't think he's noticed a difference between these and yolk- and butter-free ones, and I'm feeling a lot better about giving him these knowing he's getting a little extra nutrient and healthy fat boost.

Ingredients:

  • 500ml of orange juice OR mix of orange juice & filtered water/bone broth

  • 4 Tablespoons of gelatin powder

  • 2 raw egg yolks (optional)

  • 100g of grass-fed butter (cut into cubes)

Method:

  1. Pour juice liquid in a small saucepan and sprinkle the gelatin powder on top. Leave for 5 minutes for the gelatin to bloom.

  2. Place the saucepan on the stove over a low heat. Use a whisk or wooden spoon to gently stir the mixture until the gelatin has dissolved. This doesn't take too long and the liquid also doesn't need to get very hot for the gelatin to dissolve. To test, is to feel the liquid between 2 fingers, if there is any graininess, then there is still gelatin to be dissolved.

  3. While whisking the mix, add in the the egg yolks ONE AT A TIME. This will ensure the yolks mix in without cooking. TURN OFF the heat.

  4. While continuing to whisk, add in the butter cubes ONE AT A TIME to melt , and combine well with the mix. If it's taking a bit long for butter to melt, or you think it isn't melting because the mix isn't warm enough, then you can turn the stove back on to help it along.

  5. Now you can pour your gummie mix into moulds. Place in the fridge to set. May take 2-3 hours. Once set, store your gummies in an airtight container and consume within 5 days.

Notes:

  • The juice ratio - For bubs under 1-2 years old, I often do a mix of 300-400ml of juice to 100-200 ml of water or bone broth so it isn't as sweet.

  • If you haven't introduced egg yolks, or there is an allergy to them, then you can omit them.
